I don't see any rotated blocks in those screenshots, except Star Miner's own star bed, star dirt and star flower. (They also have star saplings.) That's not a solution to the "standing on the wall" problem. Think about all the other blocks which have an orientation, so in vanilla that's water, lava, farmland, all crops, mushrooms, fences, doors, torches, ladders, levers, crafting table, enchantment table, anvil, bookshelf, furnace, fire, TNT, mob spawners, rails, jukebox, beacon, etc etc etc (+ hundreds of modded blocks of course).
Your screenshots actually show the "standing on the wall" problem very well, so on the Star Mine mini-planets the player feels that where he is standing the gravity is weird - like you said, hilarious - but looking around he can see the rest of the world still has normal gravity. There is no sensation that where you are, everything is normal and it's everywhere else that has the 'weird' gravity.

In these images, the place where the player is standing is the place with the normal gravity. There is no "standing on the wall" problem for you - it is the other people who are standing on the wall.
Actually there's hidden code in Galacticraft which can make a world like that (probably even a smaller version for space stations). It's currently disabled, mainly because it does not work with Optifine.
